High Protein Matcha Cake
Serves: 2-4
Ingredients:
1 C natural/ Greek yoghurt
1 egg
2 Tbs corn starch
2 tsp matcha powder (I used Topeaka)
1 tbs honey
2 tsp jam (I used blueberry)
Method:
Preheat oven to 180℃ and prepare 2-4 ramekins with baking paper.
In a bowl, whisk ingredients (except jam) and evenly distribute between 2-4 ramekins.
Add jam on top and fold through.
Bake for 20 mins or until slightly brown.
Let cool for 30 mins, then refrigerate for a few hours.
Add toppings as wish and enjoy.
Topping ideas: honey, yoghurt, jam, drizzle melted chocolate.
