High Protein Matcha Cake

Serves: 2-4

Ingredients:

  • 1 C natural/ Greek yoghurt

  • 1 egg

  • 2 Tbs corn starch

  • 2 tsp matcha powder (I used Topeaka)

  • 1 tbs honey 

  • 2 tsp jam (I used blueberry)

Method:

  1. Preheat oven to 180℃ and prepare 2-4 ramekins with baking paper.

  2. In a bowl, whisk ingredients (except jam) and evenly distribute between 2-4 ramekins.

  3. Add jam on top and fold through.

  4. Bake for 20 mins or until slightly brown.

  5. Let cool for 30 mins, then refrigerate for a few hours.

  6. Add toppings as wish and enjoy.

Topping ideas: honey, yoghurt, jam, drizzle melted chocolate.
