Moroccan Stuffed Sweet Potato
Serves: 4
Cooking time: ~40 minutes
Ingredients:
Sweet Potato:
2 medium sweet potatoes, washed and halved on the longer side so its in a shape like a boat (keep skin on)
1 Tbs olive oil
Seasoning: cracked pepper, 2 tsp paprika, 2 tsp ground coriander, 1 tsp ground cumin
Mince Mix:
500g lean beef mince
1 brown onion, peeled and diced
3 cloves garlic, peeled and diced
1 carrot, diced
1 zucchini, diced
100g roasted capsicum strips from the jar, drained
Seasoning: cracked salt and pepper, 1 Tbs paprika, 2 tsp ground coriander, 2 tsp ground cumin, 1 tsp cinnamon, ½ tsp ground ginger, ½ tsp ground turmeric
2 Tbs tomato paste
60g baby spinach
1/4 cup water
Toppings:
1/2 cup natural Greek yoghurt
1/2 lemon, juiced
1 small garlic glove, crushed
Fresh coriander to serve
40g feta, crushed to serve
Methods:
Preheat oven to 180°C and line a baking tray with baking paper. Use half the oil to coat your sweet potato and add all seasonings. Roast in the oven for approximately 40 minutes, turning half way (start with flat side down).
While your sweet potato is cooking, preheat a large frypan to medium and add the remainder oil. Once your frypan is hot, add onion and garlic and sautee until translucent.
Add your carrot and zucchini and mix for another 5 minutes or until slightly softened. Add your mince cook until browned.
Add capsicum, seasoning and tomato paste and mix until well combined. Add your spinach and water and cook for a further 5 minutes or until water has thickened.
While your sweet potato and mince is cooking, add the lemon and garlic into the yoghurt and stir until combined. Set aside.
Once sweet potato is roasted, take out of the oven and serve the 4 halves on 4 plates, flat side facing up. Mash the sweet potato insides so it forms a little indent which is where you’ll put the mince.
Split the mince into 4 portions and serve over your sweet potato. Drizzle over the yoghurt mixture.
Serve with a sprinkle coriander and feta.
Tips:
For a higher calorie/flavourful option, use lamb mince
For a vegetarian option, swap the mince for TVP (textured vegetable protein)
For a lower carbohydrate option, use eggplant instead of sweet potato
For a quicker option, swap sweet potato for pasta
