Pork Dumpling Wrap Stir-fry
Serves: 3
Ingredients:
30 pack dumpling wraps
1 tsp olive oil
1 onion, peeled and diced
1 tsp garlic, minced
500g pork mince
2 bunches bok choy, chopped
1 carrot, cut into half moons
Sauce:
2 tsp sesame oil
1.5 Tbs soy sauce
1.5 Tbs oyster sauce
1 tsp brown sugar
1/2 lemon, juiced
1/2 tsp ginger, ground
1 tsp coriander seeds, ground
Season with pepper
Methods:
Split dumpling wraps into 4 piles and heat in microwaves for 2x20- second intervals. Gently pull each wrap so they are stretches and place on a plate. (These will act as pulled noodles).
In a preheated wok, saute onion and garlic in oil, add carrot and white parts of the bok choy.
Brown the mince and mix through the vegetables, adding the leaves of the bok choy.
In a small bowl, combine sauce ingredients and add into the wok.
In a pot of boiling water, gently add dumpling wraps and cook for roughly 2 minutes. Once cooked, evenly add into mince and mix immediately to prevent the wraps from sticking together.
Serve with a little chili oil and enjoy.
Tips:
Add cooked dumpling wraps into ice water to prevent from sticking if not adding into stirfry straight away.
