Salmon Feta Pasta Bake

Serves: 2

Ingredients

  • 2 salmon fillets

  • 250g punnet of cherry tomatoes

  • 200g block feta

  • Veggies of choice (I used onion, zucchini, capsicum, spinach), chopped

  • 1 Tbs olive oil 

  • 1 tsp chicken stock powder (mixed in 3Tbs water)

  • 1 lemon, juiced

  • 1 tsp crushed garlic

  • 1 Tbs mixed herbs

  • 1 tsp paprika

  • 1 tsp pepper

  • 1 tsp chilli flakes (optional) 

  • 200g pasta of choice (I used Rigatoni) 

Method

  1. Preheat oven to 180°C.

  2. Add all ingredients (except pasta) into a baking dish and cook for ~30 minutes. 

  3. Boil pasta as per packet instructions while salmon dish is cooking. 

  4. Once salmon dish is cooked, mash and mix all together. Add your cooked pasta and mix through. 

  5. Serve with a sprinkle of cheese. 

Tips:

  • Swap pasta with gnocchi or gluten free pasta
