Salmon Feta Pasta Bake
Serves: 2
Ingredients
2 salmon fillets
250g punnet of cherry tomatoes
200g block feta
Veggies of choice (I used onion, zucchini, capsicum, spinach), chopped
1 Tbs olive oil
1 tsp chicken stock powder (mixed in 3Tbs water)
1 lemon, juiced
1 tsp crushed garlic
1 Tbs mixed herbs
1 tsp paprika
1 tsp pepper
1 tsp chilli flakes (optional)
200g pasta of choice (I used Rigatoni)
Method
Preheat oven to 180°C.
Add all ingredients (except pasta) into a baking dish and cook for ~30 minutes.
Boil pasta as per packet instructions while salmon dish is cooking.
Once salmon dish is cooked, mash and mix all together. Add your cooked pasta and mix through.
Serve with a sprinkle of cheese.

Swap pasta with gnocchi or gluten free pasta
